Roast beef with all the trimmings

Last Sunday’s slow-cooked pork shoulder was a success, with a £3.99 pork shoulder joint from Aldi stretching to three meals. We also picked up an Indian ‘takeaway’ from Waitrose as we were going to get home late, so there are two meals carried over this week — the slow-cooked Jamaican corn stew and the Mexican cold remedy, which is a spiced-up tomato soup with lots of orange and lime juice.


Sunday
Roast beef with roast potatoes, carrots, cabbage and Yorkshire puddings
&
Apricot clafoutis served with cream

Monday
Mexican cold remedy

Tuesday
Korean rice with leftover beef, fried egg and homemade kimchi

Wednesday

Slow-cooked Jamaican corn stew

Thursday
Leftovers or vegetable soup, depending on what we have left

Friday
Salmon miso soup
